Greeley’s first and only restaurant featuring gourmet macaroni and cheese will open on Friday .
Owners Alex Kantor and Chris Williams will open the doors at 4 p.m. at their new Greeley restaurant, Cavatappi, at 5750 10th St .
The business partners have been revamping the 3,000-square-foot restaurant space in west Greeley for the past two months.
Kantor, 30, owns Specht Point Café in Fort Collins with his wife. He lives in Windsor. Williams, 25, is a full-time college student with a double major at Colorado State University and lives in Fort Collins.
The pair have hired 20 employees to staff the restaurant, which will serve 14 different varieties of macaroni and cheese, all of which can be served in a low-fat or gluten-free option. They also have a pasta with 40 percent fewer carbs and 200 percent more protein than traditional pastas. The menu includes a build-your-own option, appetizers, salads and desserts.
The restaurant will be open from 11 a.m. to 9 p.m . Sunday through Thursday and from 11 a.m. to 10 p.m. on Fridays and Saturdays .
They offer dine-in service, as well as family and party-sized to-go orders.
