What do you sell? Cozy Cow Dairy is a farmstead creamery located south of Windsor. The on-site farm store features viewing windows where guests can watch milk bottling and cheese making. Cozy Cow has developed a following for its squeaky cheese curds, cheddars, ice cream, cream-line milk, chocolate milk and seasonal egg nog.
Who is the owner and manager and for how long? Wife and husband team Caille Gash and Marc Pfister have operated the creamery at Cozy Cow since November of 2011.
Why did you want to start this venture? Any experience in the past? Caille worked for cheese makers in Northern California and Switzerland, interned at Dreyer’s Ice Cream, and taught fifth through eighth grade for about 11 years. Her return to dairy processing was fueled by a desire to experiment with cow and sheep’s milk, make cheese and work for herself. Marc’s ability to fix most things mechanical and electrical has been crucial to the success of the business.
Why should people do business with you? Cozy Cow is transparent and enjoys educating consumers about dairying and milk products. Heading to Cozy Cow to pick up a gallon of milk and get an ice cream cone turns an errand into a mini-field trip and supports local folks.
What else should people know about you? Many people discover Cozy Cow when they do an online search for cheese curds! Cheddar cheese is made from salted cheese curds pressed together. The unpressed curds are taken from the cheese vat while they are still squeaky and salty. We let our customers know via Facebook and text message that we have fresh curds.
Cozy Cow has a sister company, Coturnix Creamery, that bottles and processes sheep’s milk from a sheep dairy in Bushnell, Neb.
