Mady’s Pizza and Salad brings all-American food with gluten-free and veggie options to Windsor

Mady’s Pizza and Salad will be open from 11 a.m. to 8 p.m. Monday through Sunday, though owner Matthew Diaz said his hours and days of operation may shift as he gets settled in.

After three years of dreaming of opening his own restaurant, Matthew Diaz will open Mady’s Pizza and Salad this week, offering pizza, salads and sandwiches with vegetarian and gluten-free options.
Diaz will open the store at 1293 Main St., Unit 1, in the space previously owned by Dominos Pizza. Prior to opening, he held tasting events with friends and family to get feedback on his menu items and show off the work he’s put into getting the space ready to open.
“Everyone really liked the food,” he said, adding that the clear favorite was his toasted meatball sub.
Currently, the restaurant offers dining inside and to-go orders, but Diaz said the plan is to add delivery in the near future. He also offers gluten-free cheese and crust on his menu. A drawing of Diaz’ 4-year-old son, Matthews, adorns the menu and the inside counter of the store, shown smiling as he eats a slice of pizza.
Diaz said he will be doing most of the work at the new restaurant, but plans to hire two or three other employees. He said if anyone is interested in applying for the positions to stop by the store and talk to him.
Diaz and his family are from Loveland. He worked previously as a bartender at The Carousel in Greeley before it closed down, but said it was always a dream of his to open up his own business.
“I really wanted to open up in Northern Colorado,” Diaz said. “I was looking all over and this place was the perfect spot.”
“I wanted to do all-American food, and I had the idea to do pizzas,” Diaz said.
Along with pizzas, he decided to also offer salads, sandwiches and other entrees, like strombolis. He intends to add more menu items after opening, as he plays around with different foods and recipes. He plans to offer a $5.50 lunch special with different menu items each day.
The store’s grand opening event is planned for Friday, though Diaz said some of the details, such as the time, are still being ironed out. He suggested that people interested in coming can like his Facebook page for more details about the event as it gets closer. He also said people will be able to get info about his daily specials and other events at the restaurant through the Facebook page.
